Banana Pudding

  • 24 vanilla wafers, crushed into crumbs
  • 2 Tbsp. unsalted butter or margarine, melted
  • 1 large banana, cut into 1/2-inch slices
  • 1/3 cup PediaSure® Grow & Gain Shake Mix Powder
  • 1 3.4 oz package vanilla instant pudding mix
  • 1 1/2 cups cold 1% low fat or fat free milk
  • 1/2 cup frozen low fat whipped topping, thawed


Preheat oven to 325°F. Combine crumbs and butter. Firmly press mixture into a 5 X 8-inch loaf pan. Bake 10 minutes. Cool completely. Scatter banana slices over crumbs. In a mixing bowl, combine PediaSure Grow & Gain Shake Mix Powder, pudding mix, and milk. (Recipe will not work if Pediasure Shake Liquid is used.) Beat with a wire whisk until well-blended. Spoon pudding mixture over bananas. Gently spread whipped topping over pudding mixture and refrigerate 3 hours or overnight. Store in refrigerator.
