Roasted Vegetables

Makes: 1 serving

Total Time: 30 minutes

Ingredients:

  • Assorted fresh veggies (e.g. asparagus, carrots, Brussels sprouts, peppers, etc…)
  • Drizzle olive oil
  • Dash salt
  • Dash pepper

Directions:

Preheat oven to 450°F. Wash vegetables, and then cut them to one size to ensure even cooking. Place vegetables on rimmed baking sheet. Drizzle olive oil over veggies, and sprinkle with salt and pepper. Toss to cover. Roast for 5 to 7 minutes, and flip veggies again. Roast until soft.
